IN THE VINEYARD:
APPELLATION: Getariako Txakolina
VINEYARD: Family owned mountain vineyards overlooking Getaria, 10 Has.
VARIETAL: Hondarrabi Zuri. 100% Estate
FARMING: Sustainable. Only the very minimum treatments are done.
PLOUGHING: The soil cover is maintained.
SOILS: Mix of limestone and loamy soils.
WEATHER: Atlantic Moderate
VINES: 25 year old vines. Pergola trained. Trellised where the slopes are too steep for pergolas.
HARVEST: Entirely made by hand in small crates on the 2nd half of September and early October.
IN THE CELLAR:
FERMENTATION: With the native yeasts from the Estate in Small stainless steel tanks.
TREATMENTS: No chaptalization and acidification. The idea is to stay natural as much as possible.
PRESSING: No. Whole grapes.
MALOLACTIC: Spontaneous, if any.
LEES: At least 3 months lees contact
OAK BARREL AGING: No.
FINING/ FILTRATION: The wine is allowed to settle naturally by gravity and is only minimally fined or filtered.
SULFITES: Minimum
WINEMAKER: Emilio Ostazola.
PHILOSOPHY: We believe that the best wines are born in the vineyard.
TASTING NOTES: A crisp, refreshing wine with a slight effervescence (100% natural, nothing added). Notes of fresh citrus and green apple.
PAIRINGS: Excellent with seafood, meats and cheese.
